My mom arrived here in Houston yesterday, and we are so happy to have her! We enjoyed lunch at The Counter today with a bogo coupon I got in the mail, and for dinner we did papusas with the easiest shredded chicken ever. You almost can’t call it a recipe:
Place around two pounds of frozen chicken in your pressure cooker on the metal rack (we did half boneless thighs and half breasts) with about an inch of water on the bottom. Set your pressure cooker to high pressure and let it go for 25 minutes. Let it depressurize naturally and shred the chicken with a fork. We seasoned the chicken with garlic salt, pepper, and hot sauce. The combo of juicy chicken, curtido (a vinegar-y cabbage slaw), and cheese-y papusas is pretty delicious.
Day 23 was the first day I repeated an outfit, which I think is pretty good! For day 24 I wore fab new booties (the only pair left on clearance at Target, and they were my size), skinny jeans, and green zip top.
